Ingredients
 
 

  • 3 cups all-purpose flour plus more for dusting
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon active dry yeast
  • 1 cup warm water 110°F
  • 1 tablespoon olive oil

Instructions
 

Prepare The Pita Dough:

  • In a large mixing bowl, combine the flour, salt, and sugar.
  • In a separate bowl, mix the warm water and yeast, allowing it to sit for about 5 minutes until it becomes frothy.
  • Make a well in the center of the flour mixture, pour in the yeast mixture, and add the olive oil.
  • Gradually mix the flour into the wet ingredients until a dough forms.
  • If using a stand mixer, knead the dough on low speed for about 10 minutes until smooth and elastic. If kneading by hand, transfer the dough to a lightly floured surface and knead manually.

Let The Dough Rise:

  • Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1.5 hours or until doubled in size.

Form The Pitas:

  • After the dough has doubled in size, gently deflate the dough and divide it into 8 equal portions.
  • Roll each piece of dough into a ball and then flatten the balls with a rolling pin to form a circle of about 6-7 inches in diameter.

Cook The Pitas:

  • Preheat a skillet or griddle over medium-high heat.
  • Cook each pita for about 2-3 minutes on each side until puffed and lightly charred.
