  • 2 tsp lemon zest
  • 2 tbsp lemon juice freshly squeezed

Preparing the Ingredients

  • If using fresh artichokes, clean and prepare them by removing the tough outer leaves and stems, then boiling until tender. If using canned, simply drain them well.
  • Mince the garlic, zest and juice the lemon, and grate the Parmesan cheese for the soup and crisps.

Cooking the Soup

  • Warm the olive oil in a large pot over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
  • Add the artichoke hearts to the pot and sauté for an extra minute.
  • Pour in the chicken or vegetable broth. Bring the mixture to a simmer and cook for about 20 minutes so the flavors meld together.
  • Transfer the contents to a blender or use an immersion blender in the pot to puree the mixture until smooth.
  • Return the pureed soup to the pot, if needed, and integrate the heavy cream. Stir well.
  • Add lemon zest and lemon juice. Season with salt and pepper to taste. Keep warm on low heat.

Making Parmesan Crisps (Optional Garnish)

  • Preheat the oven to 400°F (200°C).
  • Place small mounds of grated Parmesan on a baking sheet lined with parchment paper. Flatten them slightly.
  • Bake for 3-4 minutes or until they are golden and crisp.
  • Allow them to cool before handling.

Garnishing and Serving

  • Ladle the warm soup into serving bowls.
  • Garnish each bowl with additional Parmesan cheese shavings and a Parmesan crisp, if desired.
