cooked artichoke hearts tomatoes capers and Kalamata olives

Artichoke Hearts with Tomatoes, Capers, and Kalamata Olives (Αγκινάρες με ντομάτες, κάπαρη και ελιές Καλαμών)

Artichoke hearts are the star of the dish, so I've used two cans to make sure there's plenty for everyone.
The ripe tomatoes add a juicy, sweet element that balances the saltiness of the olives and capers.
A 1/4 cup of capers is just enough to give the dish a briny punch without overpowering it, and 1/2 cup of Kalamata olives brings in a buttery richness.
Olive oil is a staple in Greek cooking, ensuring the vegetables don't stick and adding its own subtle flavor.
Garlic adds depth, and the parsley gives a fresh, herbal note to finish.
Sautéing the garlic first infuses the olive oil with flavor, which then gets absorbed by the artichokes.
Cooking the artichokes for a few minutes before adding the rest of the ingredients helps them develop a richer flavor.
The simmering time allows the tomatoes to break down slightly and the flavors to combine nicely.

Equipment

  • Cutting board Choose a sturdy cutting board as your work surface to safely chop and dice the tomatoes and mince the garlic. A good-sized board will give you plenty of space to work without crowding your ingredients.
  • Sharp Knife: A sharp knife is essential for precise cutting, ensuring that your tomatoes are nicely diced and your garlic is finely minced. This helps them cook evenly and enhances the dish's presentation.
  • Large skillet or saucepan: The cooking happens in one pan, making cleanup easier. A large skillet or saucepan with a lid will provide sufficient space to combine and cook all ingredients without overcrowding them.
  • Stirring spoon: Use a wooden or heatproof spoon to mix your ingredients together in the skillet. This will help you sauté and simmer your dish to perfection, preventing any sticking or burning.
  • Measuring Cups and Spoons: Accurate measurements are important for balancing the flavors properly. Measuring cups and spoons will be used for the capers, olives, olive oil, and seasonings to ensure the recipe turns out just right.
  • Can opener: Since the artichoke hearts are canned, you'll need a reliable can opener to access them easily and safely.
  • Strainer or colander: T o drain the artichoke hearts and capers, have a strainer or colander on hand. This tool ensures that excess liquid is removed, which helps achieve the desired texture in your finished dish.
  • Lid for the skillet or pan: To simmer the ingredients properly and allow the flavors to meld, you'll need a lid that fits well on your skillet or saucepan.

Ingredients

  • 2 cans 14 ounces each of artichoke hearts, drained
  • 2 large ripe tomatoes diced
  • 1/4 cup of capers drained
  • 1/2 cup of pitted Kalamata olives sliced
  • 2 tablespoons of olive oil
  • 2 cloves of garlic minced
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

Warm It Up:

  • Start by heating the olive oil in a large skillet over medium heat. You want the oil to get warm enough that it shimmers slightly, but not so hot that it starts to smoke.

Flavor Boost:

  • Add the minced garlic to the skillet once the oil is heated. You'll want to sauté it until it's fragrant – this usually takes about 1 minute. Be careful not to burn the garlic, as that can create a bitter taste. Sautéing helps to release the garlic's natural oils, infusing your dish with a delicious aroma and flavor.

Golden Hearts:

  • Next, carefully place the drained artichoke hearts into the skillet. Cook them for about 2-3 minutes, stirring occasionally, until they start to take on a lovely golden color. The idea is to give them a bit of a sear, which enhances their texture and flavor.

Toss In Goodness:

  • Now, it’s time to add the rest of the stars of the show. Toss in the diced tomatoes, capers, and sliced Kalamata olives. Stir everything well to make sure the ingredients are evenly distributed throughout the skillet.
  • Season Well: With all your ingredients in the skillet, season them with salt and pepper. Start with a lighter hand and adjust the seasoning as needed - especially since the capers and olives bring their own saltiness to the mix.

Let It Simmer:

  • Once seasoned, cover the skillet with a lid. Reduce the heat to low and let the mixture simmer gently. This should be about 10-12 minutes, but make sure to check occasionally. The tomatoes will start to break down a bit, and all the flavors will come together during this time.
  • Garnish and Serve: When everything has cooked through, and the flavors have combined beautifully, it’s time to remove the skillet from heat. For a pop of color and freshness, garnish the dish with chopped fresh parsley. This not only adds a nice herby flavor but also makes your dish look more inviting.

Finally, serve warm:

  • This dish is great on its own or as a side with meat or fish. It’s hearty but not too heavy, and the savory Mediterranean flavors are sure to win over any crowd!

TIp:

  • Remember, every stove and skillet can be a little different, so use these instructions as a guide and trust your senses. The smells and colors will tell you a lot about how the dish is cooking, so keep an eye on it and adjust the heat if needed.
