Preparation of Artichokes:
- If using canned artichoke hearts, drain them and pat dry with paper towels to remove excess moisture. For frozen artichokes, ensure they are completely thawed and then pat dry.
- Cut the artichoke hearts into halves or quarters, depending on their size and your preference. Smaller pieces will absorb more flavor and cook faster.
Mincing Garlic and Chopping Parsley:
- Peel and finely mince the garlic cloves. The finer the garlic is minced, the more evenly it will distribute its flavor.
- Wash the parsley and chop it finely. Set aside some of the chopped parsley for garnishing the dish at the end.
Cooking the Artichokes:
- Heat the olive oil in a large skillet over medium heat. You want enough oil to coat the bottom of the pan.
- Once the oil is hot, add the minced garlic. Sauté the garlic for about 1 minute until it's fragrant but not browned.
- Add the artichoke hearts to the skillet. Stir to coat them in the garlic-infused oil.
- Season the artichokes with salt, black pepper, and optional dried oregano and red pepper flakes. Mix well to ensure even seasoning.
Sautéing and Adding Lemon:
- Cook the artichokes for about 5-7 minutes, stirring occasionally, until they are tender and lightly golden.
- Drizzle the lemon juice over the artichokes during the last minute of cooking. The lemon juice adds a fresh zesty flavor and helps to deglaze the pan, lifting any flavourful bits stuck to the bottom.
Finishing the Dish:
- Once the artichokes are cooked, remove the skillet from heat.
- Stir in the chopped parsley, reserving a bit for garnish.
- If desired, add grated lemon zest for an extra burst of citrus flavour.
Serving:
- Transfer the cooked Garlic-Parsley Artichoke Hearts to a serving dish.
- Garnish with the reserved chopped parsley.
- Serve warm as a side dish or appetizzer.
