Equipment

  • Oyster Knife: A must-have for shucking oysters. It's specifically designed to open oyster shells safely and effectively.
  • Baking Tray: To arrange and bake the oysters.
  • Small Mixing Bowl: Useful for crumbling and mixing the feta with seasonings.
  • Measuring Spoons: For accurately measuring olive oil, oregano, and black pepper.
  • Oven Mitts: To handle the baking tray when it's hot from the oven.
  • Serving Platter: To present the baked oysters elegantly.
  • Lemon Squeezer (optional): If you prefer fresh lemon juice for serving.
  • Protective Gloves (optional): If you're new to shucking oysters, gloves can help protect your hands.
  • Brush (optional): To clean the oyster shells before shucking, if they're particularly gritty.

Ingredients

  • 12 large oysters shucked
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper freshly ground
  • 8 Lemon wedges for serving

Instructions

  • Preheat the Oven: Turn your oven to 400°F (200°C). This temperature is perfect for baking the oysters without drying them out.
  • Prepare the Baking Tray: Line your baking tray with aluminum foil or parchment paper. This helps in easy cleanup and prevents sticking.
  • Shucking the Oysters: Hold an oyster with a kitchen towel to protect your hand. Insert the tip of the oyster knife at the hinge of the oyster shell.
Twist the knife gently to pry the shell open. Slide the knife along the top shell to detach the muscle. Remove the top shell and carefully loosen the oyster in the bottom shell, keeping the liquid intact.
  • Arrange the Oysters: Place the shucked oysters with their liquid in the half shell on the prepared baking tray. Ensure they are stable; crumpled foil can be used to support them if needed.
  • Drizzle Olive Oil: Drizzle a bit of olive oil over each oyster. The oil adds a nice richness and helps the toppings to stick.
  • Add Seasonings: Sprinkle each oyster with a pinch of dried oregano and freshly ground black pepper. These spices add depth and a hint of warmth to the dish.
  • Top with Feta Crumble: Crumble the feta cheese into small pieces, then gently place them on top of each oyster. The feta should be in small enough pieces to melt slightly and blend with the oyster's natural juices.
  • Bake the Oysters: Place the tray in the preheated oven. Bake for about 10 minutes. Watch for the edges of the oysters to curl slightly, and the feta should be just turning golden. This is the sign they're done.
  • Serving: Carefully remove the tray from the oven. Let it cool for a minute, then arrange the oysters on a serving platter.
  • Serve immediately with lemon wedges on the side. Encourage your guests to squeeze a bit of lemon over their oyster for a fresh, zesty finish.

Notes

This method ensures that the oysters remain tender, and the quick bake allows the feta to melt slightly without overpowering the oysters' delicate taste.
