  • 1 cup water The consistency should be quite runny to so it can penetrate the cake
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1 cinnamon stick
  • Peel of 1 orange optional for extra flavor

Instructions
 

Preparing the Cake:

  • Preheat Oven: Set your oven to 350°F (175°C). Grease a 9-inch round baking pan or line it with parchment paper. This helps the cake come out easily.

Mixing Dry Ingredients:

  • In a bowl, combine the following ingredients for the cake's base: (Flour, Cocoa powder, Baking powder, A pinch of salt)
  • Ensure these are mixed well to distribute the cocoa and baking powder evenly.

Preparing Wet Ingredients:

  • In a different bowl, beat the eggs and sugar until they're pale and fluffy. This could take about 4-5 minutes. Don't rush it; this step is key! mix together to create a smooth, sweet mixture: (Sugar, Eggs, Olive oil, Milk, A small amount of vanilla extract) Whisk these until you achieve a consistent blend.

Add Wet Ingredients:

  • Slowly mix in the oil, milk, and vanilla extract into the egg mixture.

Combine Dry with Wet Ingredients:

  • Gradually add the dry ingredients to the wet mixture. Mix until just combined. Don't overmix, this helps keep the cake light and fluffy and helps to avoid the cake from getting tough.

Adding Chocolate Chips:

  • Stir in chocolate chips for added texture and chocolate flavor.

Baking the Cake:

  • Pour the batter into the greased cake pan. Bake in the preheated oven for about 25-30 minutes. To test for doneness, insert a toothpick into the center of the cake. It should come out clean when the cake is ready.

Cooling and Serving:

  • Allow the cake to cool in the pan for 10-20 minutes.
  • Once cooled, it's ready to be served. This waiting period is essential for the cake to set properly.

Preparing the Chocolate Syrup

    Combine Ingredients:

    • In a saucepan, combine water, sugar, honey, and cinnamon stick.
    • Add the orange peel if you're using it.

    Boil the Syrup:

    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes. It should slightly thicken.

    Cool the Syrup:

    • Discard the cinnamon stick and orange peel.

    Combining Cake and Syrup:

      Pour the hot Syrup:

      • Slowly pour the hot syrup over the cake, letting it soak in. Don't rush this part.

      Rest:

      • Let the cake rest and come to room temperature for an hour to absorb the syrup fully.

      Serve:

      • Your sokolopita is ready! Slice and serve. It's great with a dollop of whipped cream or a scoop of vanilla ice cream.

      Tips:

      • Cake Texture: This cake is denser than a typical sponge cake due to the syrup. Don't worry if it seems heavy; it's meant to be like that.
